Wash them
Cut spiky tips of with kitchen scissors
Cut bottom flat with knife
Place in dish with 1/2 " of water
Cover with lid or plastic wrap
Cook in microwave for several minutes, until a dull green color & soft
You eat them by pulling off the leaves & eating just the bottom soft part of the leaf. They get softer and better as you get more inside the artichoke.
Do not eat the hairy part in the middle. But do scoop it out with a spoon. What's left is called the artichoke heart and is the best part. You can eat it then, refrigerate it and chop it into pasta salads, or use it in dips.
