If some of you are like me and still have an acorn squash or two laying around, let me suggest the recipe i tried today. I LOVED IT!! It was easy-which is a plus, and it was tasty. this is a good one to try if you are tired of always cooking your acorn squash with the stand-by butter and brown sugar (which is yummy too).
GLAZED ACORN SQUASH
1 acorn squash
2 tablespoons maple syrup
2 tablespoons whipping cream-i used heavy (you could use butter, but i recommend the cream)
1-Heat oven to 350 degrees F.
2-Cut your squash in half lengthwise and remove the seeds and fiber. Place in an ungreased baking dish with the cut side facing up.
3-Fill each half with 1 tablespoon of the syrup and 1 tablespoon of the cream (or butter).
4-Bake uncovered for about an hour until it is tender and smells yummy!!
