Save the Beet Greens?

Yes! Now let me state that I don't know if our beets will actually come with the greens intact or if they'll be topless, but if they are there, don't throw them out! (Of course these are baby beets, so there may not be many greens, but for future reference in any case...) Beet greens are a tender green vegetable and can be cooked and served much like Swiss Chard. Here's the technique:

Heat oil or butter in a sauté pan, add the greens (still wet from washing), cover, and steam until wilted. Once the greens wilt, remove the lid and sauté the greens over high heat until all the liquid evaporates. You don't get easier than that! And you can spice it up with any flavor that suit your taste...curry, garlic, cumin, cilantro, soy sauce, red pepper flakes, even raisins and almonds. Yum, yum.
