What do I do with ALL THESE ANAHEIM CHILES?!

I know, there are a lot of them aren't there.... Well, a little background:

They are named after the city in CA and are generally sold green. However, if you grow them at home and leave them on the vine they will turn red. They are also sold canned, dried and in decorative wreaths.

Anaheims are mild, sometimes sweet and have just a slight bite of heat. They are great to make mild salsa, to stuff with meat or cheese (see chile rellenos to follow) and roasted and sliced on sandwiches.
